As a food service industry professional I can tell you that quality cookware and affordable cookware sets are under-rated.  I used to be surprised by culinary disasters due to sub-par preparation tools.  I’ve met a number of people who believe that because their food cooks inconsistently or improperly that their cooking skills are to blame.  In so many cases, however, a brief examination of the circumstances often turns up poorly constructed cookware.

Most pots and pans available at discount stores and grocery stores, and even at pricier retailers like Macy’s are sub-standard quality.  Often lacking good conductivity and even-heating they are worthless out of the box, often burning or undercooking everything that they touch (sometimes both).  That why I recommend buying better quality, even if it means sacrificing conveniences like non-stick surfaces.

Don’t get me wrong, some non-stick cookware has exceptional heat conductivity, but if it’s the difference between using extra oil in a stainless pan with a copper core or burning the crap out of everything - I go with extra oil or pan spray.  Take a look and you’ll soon discover that better doesn’t have to mean more expensive.  Experience the stainless steel revolution and get the results you’ve always wanted!
